My mother in law gave me her recipe for White Bean Chicken Chili in my recipe box as a wedding gift, it’s her Dad’s version, and he’s a TX man!!!
It’s so yummy and a FitNIx family favorite….
I’ve shared the pictures of it and always get asked the recipe so here it is….my cleaned up, closer to my macros, version!
While the beans are boiling I boil my chicken, I do at least three big chicken breasts…..boil for 20-30 minutes then shred….
I chop into big pieces because my oldest just likes the chicken so its easier to pick out for her…..yeah, we do that in our house too!!!
After the hour of beans boiling I add the rotel, mushrooms, 1 chicken bullion cube, cumin, and the white bean chicken chili mix (this is the cleanest version I can find, and I DO NOT USE THE MASA/FLOUR).
I love mushrooms so I use A LOT!!! I let this cook/simmer for at least another hour. I save my chicken broth from the pot of boiling chicken to use for more water if needed…..
About 30 minutes before serving I add the CILANTRO…which I also love….
I top mine with REDUCED FAT Mexican Shredded cheese and the hubby likes to have his with tortilla chips!!! So yummy, great for left overs, great for big pots for big families, and not too shabby on the macros…..higher in carbs because of beans but a healthy dinner none the less!!
Chicken Breasts, White Beans, Onion, Mushrooms, Rotel (mex. or original), White Bean Chicken Chili Mix, Chicken Bullion, Cumin, Cilantro!!

That’s without cheese and I would suggest you plug the ingredients into your own food diary to be sure…..
