ONE POT BEEF SKILLET
I have shared this recipe in past blog posts as part of my “what I eat for progress” examples but wanted to give y’all a quick link to it. I found this on www.bodybuilding.com a few years ago, so its not an original but one I have memorized.
It’s called One Pot Beef Skillet and thats one of the best parts, its all in one pot. Most of the ingredients I always have on hand and the kids and hubby approve.
I have found that a lot of the “clean eating” recipes have so many ingredients and if I have to think too much to prepare and plan dinner it’s not something I’m going to want to do often, no matter how yummy it may be. This takes 30 minutes total and makes for great left overs and easy clean up!!!
1-1.5lbs lean ground beef
1 cup onion chopped
1 cup mushrooms chopped
1 cup frozen corn
1 cup salsa
1 cup carrots chopped
1 can tomato soup
1/2 garlic clove
1/2 cup of water
Brown beef and drain
Add salsa, corn, water, soup and simmer for 5 minutes
Add carrots, onion, mushroom, and garlic and simmer for another 10-15 minutes
Top with shredded cheese, over brown rice or Qunioa…save the rest for lunch tomorrow.
I read on another fitness page something that has stayed with me…..there are a lot of complaints that “healthy eaters” eat the same foods over and over…..well who doesn’t eat some of the same meals over and over.
If we find something that we like, is easy enough to shop for and prepare, and meets our nutritional goals, you can bet its something we will have often, thats not boring, thats just smart and real life.
